If you want to make zombies stay put, you can place other blocks that will cause the block to sink into the ground. There are also block options available that will allow you to break the block into smaller pieces. This will cause the chunks of the block to fly around in random directions unless the chunk is broken into smaller chunks first.

One of the best ways to utilize these particles is to place them above a block that has multiple horizontal blocks. For example, place a redstone torch next to a dead spruce tree and you will have a nice sight for zombies and monsters as they walk across the top of the torch.
